Inspired by the 7,000 year old ancient Hindu ritual drink “Soma” (which promised to prevent ageing and imbue the drinker with the energy of a thousand elephants”), this photogenic cocktail spotlights flavours of ginger, honey, curry leaves and yellow chartreuse, laced with angostura bitters and spiced bourbon. Known for its innovative cocktail creations, Terrible Baby has pulled out the big guns by welcoming renowned mixologist Axel Gonzalez as Bar Manager! Earning his stripes at the Four Seasons Buenos Aires, before relocating to Hong Kong to recreate the polo theme at Buenos Aires Polo Club, Gonzalez has continued to work his magic in bars across the city. The celebrations are to be marked with two Hong Kong-inspired cocktails: the botanical Osmanthus Fizz ($85) and the Fallen Spritz ($85). The first of which is a fragrant tea-infused take on the classic Gin Fizz; think London Dry gin infused with a chamomile tea syrup that’s steeped in Osmanthus tea – a refreshing nod to Hong Kong’s tea culture and traditional Chinese Medicine. Red Sugar

And the award for the quirkiest cocktails of the month goes to Red Sugar, Kerry Hotel’s garden rooftop bar. Its newly launched cocktail menu is inspired by the post-war era of Hong Kong, with each drink taking its cue from the eight most significant industries of the 60s, 70s and 80s. A Golden Age, for instance, represents fishery and agriculture, and is crafted with Sichuan green pepper infused gin (this pepper is a popular spice used to enhance seafood), lychee liqueur, tomato water and dried squid shreds. Meanwhile, the Young At Heart harks back to Hong Kong’s toy industry and comes topped with a strawberry belt candy foam. Our favourite, however, has to be the tongue-in-cheek My Wife Is (Always Right), which tells the tale of the long-standing pastry industry and the classic “lo por beng” or wife biscuit.

Home to some of the best views in the city, a night out at aqua is always a treat – and this month it’s about to get even better thanks to a series of special pop-ups featuring Hong Kong’s finest award-winning mixologists. Each guest has recently made the list of Asia’s 50 Best Bars, so you know you’re in for a treat. First up is the team from The Pontiac (Thursday, 4 June to Sunday, 6 June), who will be serving up four signature cocktails including the Hobnail (made with rye whiskey, ginger, lemon, orange oil, Angostura Bitters and Averna Amaro). The Diplomat is the latest bar to set up shop in Central’s H Code. Opened by mixologist, John Nugent, the new bar seeks to bridge the gap between pubs and speakeasies. The 18-seater space is decked out with custom chrome fittings. It will be well at home with other H Code drinking dens, including Tell Camellia and Saketen. The cocktail menu is set to be a winner, with popular tipples sure to include the 𝐈𝐫𝐢𝐬𝐡 𝐂𝐨𝐟𝐟𝐞𝐞, made with Jameson Irish Whiskey, Martell VSOP, Tensaito, Elephant Grounds Cold Brew and cold cream.

TMK

Along with serving creative and (more importantly!) delicious sushi hand rolls and Japanese-inspired dishes, rowdy restaurant TMK is also a great option for drinks. So if you’re looking for a mid-week pick-me-up, don’t miss the new “Wasabi Wednesday” deal. Paying homage to its name, the specially crafted Katana ($50) is a wasabi-infused margarita that packs a punch. Frank’s Library

Taking its cue from the flavours and culture of Japan, Frank’s Library has a whole new drinks menu this month. Hidden inside popular drinking den, Foxglove, the speakeasy bar tells the story of fictional character Frank Minza’s travels; this time conveying his love for Japan. Available until mid-summer, don’t miss the easy drinking Impossible Highball ($150) made with Rotovap coconut milk and rum, Giffard peach liqueur, vanilla liqueur and 1724 tonic, the delicate Sakura Blossom ($160) with hibiscus-infused Baijiu, sous vide marshmallow, half & half, lemon juice, sugar syrup and maraschino liqueur, topped with a delicate layer of raspberry dust, and the Tradicion ($150), with Nikka from the barrel, Four Fox Sake, sous vide nori, rice horchata, yuzu, lime and saline, among other creative libations.
