Chef Max Levy delights with a selection of creative new Izakaya dishes. The finished product is then grilled and served on a bed of grated daikon and dashi-infused cabbage. For vegetarians, the Eggplant Nanbanzuke ($88) is a standout. While completely plant-based, it’s designed to evoke all the potency of a fish dish, as well as the sought-after texture of ceviche. Then there’s the El Capricho Jose Gordon Croquettes ($180), which interestingly features the world’s best Spanish ox rump. The textural, golden bites boast a velvety honey, miso, foie gras centre and are served with candied ginger, adding a touch of fragrant spice – divine!
